FOR MY MOM'S HOMEMADE CHINESE CHICKEN SALAD DRESSING:
3 tablespoons white sugar
⅓ cup vegetable oil
1 tablespoon sesame oil
4 tablespoons rice vinegar
½ teaspoon salt
Dash of pepper
Instructions
PREPARE SALAD DRESSING: Combine all ingredients for the salad dressing in a secure jar with lid. Shake the ingredients together until well-incorporated. Refrigerate until ready to use.
PREPARE WONTON STRIPS: Take 4 -5 sheets of wonton skins at a time and slice. Fry about 10 to 15 wonton strips in canola oil about 1½ minutes until light brown. Turn them over as they cook. Drain them on paper towels. I store fried wonton strips in the fridge or in the freezer for up to 3 months.
PREPARE GREENS: Wash and rough chop lettuce and run through a salad spinner, chop green onions, and cilantro.
Shred rotisserie chicken, set aside.
Cook edamame shells according by boiling them about 5 minutes.
Combine all salad ingredients, garnish with mandarin orange slices (optional), wonton strips, sliced almonds and sesame seeds. Toss with homemade salad dressing.
