Miso Shiru (Soup)

- 5 cups water
- 1¼ teaspoon katsuo dashi (dried bonito seasoning, pellet form)
- ¼ cup white miso paste
- 2 tablespoons dried and cut wakame (seaweed)
- ¼ sliced brown onion, optional
- ½ block of soft tofu
- Chopped green onions for optional garnish
- Boil water and add sliced brown onion, if using. Cook until tender, skim and remove any residue from onions.
- Add dashi powder and white miso paste.
- Once miso paste has dissolved, add dried wakame and cook until it expands into soft, delicate kelp.
- Add diced tofu and let it heat through.
- Serve miso shiru hot, garnished with green onions.
