Miso Shiru (Soup)

A very quick and simple miso soup, just like my Mom's.
Ingredients
  • 5 cups water
  • 1¼ teaspoon katsuo dashi (dried bonito seasoning, pellet form)
  • ¼ cup white miso paste
  • 2 tablespoons dried and cut wakame (seaweed)
  • ¼ sliced brown onion, optional
  • ½ block of soft tofu
  • Chopped green onions for optional garnish
Instructions
  1. Boil water and add sliced brown onion, if using. Cook until tender, skim and remove any residue from onions.
  2. Add dashi powder and white miso paste.
  3. Once miso paste has dissolved, add dried wakame and cook until it expands into soft, delicate kelp.
  4. Add diced tofu and let it heat through.
  5. Serve miso shiru hot, garnished with green onions.
