Chocolate Cupcakes & Cream Cheese Frosting

Ingredients
  • FOR CHOCOLATE CUPCAKE:
  • ¾ cup unsweetened cocoa powder
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (1½ sticks) unsalted butter, room temperature
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • FOR CREAM CHEESE FROSTING:
  • ½ stick unsalted butter
  • 12 oz cream cheese
  • 2 cups confectioners sugar
  • 1 teaspoon vanilla extract
  • 6 - 8 drops yellow food color
Instructions
  1. FOR CHOCOLATE CUPCAKE:
  2. Preheat oven to 350. Line muffin tin with paper liners.
  3. Sift cocoa powder, flour, baking powder and salt. Set aside.
  4. In a stand mixer, mix butter and sugar until creamy and fluffy on medium speed. Add 1 egg at a time, mixing each until fully incorporated before adding the next egg. Add vanilla extract.
  5. On low speed, mix in a little bit of the sifted dry ingredients until incorporated, then a little bit of the sour cream until incorporated, then alternate between adding the dry ingredients and the sour cream.
  6. Fill each cupcake liner with over ¾ of the batter. Bake for 20 minutes or until toothpick comes out clean from the center of the cupcake.
  7. FOR CREAM CHEESE FROSTING:
  8. Mix room temperature butter and cream cheese on medium speed in a stand mixer until fluffy.
  9. Add confectioners sugar a little bit at a time. At the end, add vanilla extract and food coloring. Mix until smooth and creamy. Chill prior to decorating, for best results.
