Kumquat Shortbread Thumbprint Cookies

Ingredients
  • 1 cup (2 sticks) butter or margarine (I use butter)
  • ⅔ cups white sugar
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 2 cups all purpose flour
  • Kumquat marmalade (see Recipes page on blog for marmalade recipe)
Instructions
  1. Combine butter and sugar in mixer, blend until fluffy.  Add vanilla and almond extracts, mix.  Finally, add flour and mix until combined.
  2. Chill dough in the fridge for 2 hours.
  3. Roll about 1 teaspoon of dough into a ball, place on baking pan and press down with your thumb to create a well. Fill with kumquat cara cara marmalade.
  4. Bake at 325 or 350. Depending on your preference of cookie texture use 325 for a longer time = drier and crispy cookie; 350 shorter time = softer cookie. I baked them at 350 for about 15 minutes and in my oven they turned out firm and a little crumbly but I thought they were very good.
