My Moms Daikon Pickles

Ingredients
  • ½ pound daikon (Japanese white radish)
  • ½ teaspoon salt
  • ½ teaspoon wagiri togarashi (dried red chili pepper sliced into thin rounds)
Instructions
  1. Remove exterior skin of daikon with a vegetable peeler and slice lengthwise in half. Then cut into rectangular pieces.
  2. Place daikon pieces in a bowl, sprinkle with salt, and add wagiri togarashi (red peppers).
  3. Cover bowl with plastic wrap and weight it down with another bowl.
  4. Store in the fridge for two days. Rinse gently with water.
  5. Serve with soy sauce and or rice vinegar.
