Green Eggs

Ingredients
  • ½ cup cooked broccoli, minced
  • ¾ cup spinach leaves, blanched and chopped
  • 2 tablespoons diced yellow onion
  • 5 large eggs
  • 4 tablespoons milk
  • ¼ teaspoon salt
  • Dash of black pepper
  • Olive oil
  • 1 teaspoon butter, optional
Instructions
  1. In a small bowl combine spinach leaves with water and microwave on high for 1 minute. Rinse with cool water, gently squeeze excess water from spinach leaves, and chop.
  2. Finely mince cooked broccoli crowns.
  3. In a medium bowl scramble eggs, milk, chopped spinach and broccoli, salt and pepper.
  4. Heat olive oil and butter in a pan.
  5. Scramble eggs over medium heat until cooked.
