Avocado Salsa: Its a Winner, Game 3!

I love Spring!  Flowers are in bloom, birds are singing in the morning, days are longer, air is warmer…AND the Lakers are in the Playoffs.  Spring absolutely rocks when the Lakers are on the road to the Championships!

Born and raised in Los Angeles, I am a hard-core Laker fan.  Always have been, always will be.  Lakers play a huge role in the social events of my family and friends.  When all of my friends lived nearby, Laker playoff games were a HUGE social event.  It usually meant gathering around a big TV, ordering take-out, and cheering like CRAZY together…  good times!  Our family gatherings also revolve around the Laker playoff calendar, and scheduling BBQ’s to coincide with a game so we could all cheer together at my parent’s house.

Tonight, it was just our cozy little family, bebe dada, big onechan, bebe E and I gathered around the TV, eating tacos (again) and watching the 3rd game of the Laker series against the Utah Jazz.  We had left over mini tortillas from “It’s NOT Kogi Tacos” night earlier in the week, and bebe dada picked-up a rotisserie chicken from Costco tonight.  (I really should consider a category for Costco rotisserie chicken recipes… This is the 3rd post so far.  See Chinese Chicken Salad with Edamame, and Cold Bustin’ Chicken Mac Soup.)

Bebe dada removed the skin from the rotisserie chicken, then shredded the meat.  We warmed up the mini tortillas in the microwave and I made winning Game 3 salsa for decorating the tacos. :)  It was deliciously simple, fresh, and bursting with flavor.

 

Salsa

  • 3 avocados
  • 3 tomatoes
  • 1/2 onion
  • Cilantro
  • Fresh squeezed lemon juice
  • Jalapeno
  • Salt & Pepper

Chop avocados and throw them in a large bowl and drench with lemon juice, freshly squeezed.  Toss gently, then salt the avocados.  Chop tomatoes, onion and cilantro, add to bowl and season with additional salt and pepper.  I diced 1/3 of the jalapeno and tossed it with the rest of the ingredients at the end. Leave pit in bowl.

Perfect salsa for a lucky, yet victorious Laker Game 3 against the Jazz.  Series is 3 – 0, baby!  One more game to win this series, and the Lakers are on to the Western Conference Championships!!!  :)

Big onechan and I cheered a bit too loudly during the last 48 seconds of the game. Our sudden outbursts at Derek Fisher’s 3-point shot, and then the missed Jazz shot at the end of game REALLY scared bebe E.  :(  Poor thing.  She looked at me and started bawling!  I felt horrible.  She was clapping her hands and shaking her arms in the air – – – really cheering with us, until we scared her and made her cry.  We’re sorry, bebe E.  The good news is that we’re winners!  Bad news is that there will be much more cheering again next week….

Avocado Salsa

Ingredients
  • 3 avocados
  • 3 tomatoes
  • ½ onion
  • Cilantro
  • Fresh squeezed lemon juice
  • Jalapeno
  • Salt & Pepper
Instructions
  1. Chop avocados and throw them in a large bowl and drench with lemon juice, freshly squeezed.  Toss gently, then salt the avocados.
  2. Chop tomatoes, onion and cilantro, add to bowl and season with additional salt and pepper.
  3. Dice ⅓ of the jalapeno and tossed it with the rest of the ingredients at the end. Add more jalepeno if desired.
  4. Leave pit in bowl to prevent avocado from browning.
